Chicken Chili Recipe
This recipe is so easy and convenient. It is the perfect recipe for a cold day or when you just want something hot and soothing. It is also very filling. I cook this recipe in a crockpot. I put it in the crockpot in the early afternoon, and it's done in about 3-4 hours. This recipe is for a big pot of chicken chili, but feel free to adjust the ingredients as needed.
Chicken Chili Recipe
Ingredients:
2 raw chicken breasts
2 14.5 oz cans of diced tomatoes
2 8 oz cans of tomato sauce
1 medium size yellow pepper diced
1 medium size red pepper diced
1 bag of frozen corn
1 medium onion diced
1 15.5 oz can of Red kidney beans (rinsed)
1 15.5 oz can of black beans (rinsed)
1 ring of beef sausage sliced (you can substitute your choice of sausage)
1 cup of fresh mushrooms of your choice
1 cup of chicken broth
1 8 oz block of cream cheese
2 tablespoons of Chili powder
1 tablespoon of Cumin
1 tablespoon of Italian seasoning
1 tablespoon of garlic powder
1 tablespoon of onion powder
1 tablespoon of Pepper
You can adjust the seasonings as per your particular taste. I don't measure my seasonings so you may need more or less of some of the seasonings.
Combine in your crockpot diced tomatoes, tomato sauce, red and yellow pepper, onions, corn, kidney beans and black beans, sausage, mushrooms, corn, chicken broth, and seasonings. Mix all of those ingredients together in the crockpot. Add the chicken after you have mixed in all of the ingredients. Then set your crockpot on low if you want it to cook for a longer period of time. Set it on high if you want the crockpot to cook it a little faster. I usually set mine on high and it cooks in about 3-4 hours. Once the chicken is tender, remove it onto a plate and shred it. After shredding the chicken, add it back to the crock pot with the rest of the ingredients. After all of that is done, turn off the crockpot and add the block of cream cheese. Stir the cream cheese until it melts completely into the chili. The cream cheese gives it a creamy texture. You are done and ready to enjoy this delicious chili.
